Berry crepes with cream cheese¶
Pancake mixes and most baking powders contain phosphate additives, which your body absorbs almost completely. Crepes need no baking powder at all: flour, egg and unsweetened almond milk make a thin batter that cooks in a minute. This makes 4 crepes, 2 per person.
Serves 2 · 20 minutes · Lower potassium · Lower phosphorus · Vegetarian
Carbohydrate per serving
44 g carbohydrate (about 3 carb choices of 15 g). For about 55 g, add ½ cup more blueberries (11 g) or a clementine (9 g).
Per serving¶
| Energy | Carb | Protein | Potassium | Phosphorus | Sodium | Fluid | Fiber |
|---|---|---|---|---|---|---|---|
| 422 kcal | 44 g | 12.2 g | 267 mg | 184 mg | 237 mg | none | 2.9 g |
Checked by scripts/build_handbook.py: sodium at most 600 mg per serving; "lower potassium" means at most 600 mg and "lower phosphorus" at most 300 mg per serving. See how recipes are checked.
Ingredients that are not in the app's food list (herbs, spices and a few others) add about 3 mg potassium per serving; they are counted above.
Ingredients¶
| Ingredient | Amount | Grams |
|---|---|---|
| Flour, all-purpose | ½ cup all-purpose flour | 62 g |
| Egg, whole, raw | 2 large eggs | 100 g |
| Almond milk, unsweetened | ¾ cup unsweetened almond milk (no phosphate in the ingredients) | 196 g |
| Sugar, granulated | 1 tbsp sugar | 13 g |
| Vanilla extract | ½ tsp vanilla extract | 2.1 g |
| Butter, unsalted | 1 tbsp unsalted butter, for the pan | 14 g |
| Cream cheese | 4 tbsp cream cheese, softened | 58 g |
| Blueberries, raw | 1 cup blueberries, fresh or frozen and thawed | 148 g |
| Cinnamon, ground | a pinch of cinnamon | 0.5 g |
Steps¶
- Whisk the flour, eggs, almond milk, sugar and vanilla until smooth. Let the batter rest for 10 minutes if you have time.
- Heat a non-stick pan over medium heat and rub it with a little butter. Pour in a quarter of the batter and tilt the pan so it covers the bottom thinly.
- Cook for about 1 minute until the edges lift, flip, and cook 30 seconds more. Repeat to make 4 crepes.
- Mix the cream cheese with the cinnamon. Spread 1 tablespoon on each crepe, add a quarter of the berries, and fold or roll.
Why it works for kidneys¶
- No baking powder means no added phosphate: baking powders, even low-sodium ones, usually contain a phosphate.
- Cream cheese has far less phosphorus than other cheeses: about 16 mg per tablespoon.
- The almond milk is cooked into the crepes, so it does not count toward a fluid limit.
Make it fit you¶
- Other fruit: strawberries or raspberries swap cup for cup and have less carbohydrate.
- Freeze: stack cooled crepes between sheets of baking paper, freeze, and warm them in a dry pan.
- Rice milk instead of almond milk: fine if the label has no phosphate; it adds about 15 g carbohydrate to the recipe (about 8 g a serving).
