Lemon-garlic chicken with herbed rice and green beans

A plain roast chicken breast becomes a full dinner with a lemon-garlic marinade, rice tossed with butter and parsley, and green beans. It uses no salt; lemon, garlic, oregano, paprika and black pepper carry the flavor. The portion is 3 oz of cooked chicken, the size of a deck of cards.

Ingredients

Ingredient Amount Grams
Chicken breast, roasted, skinless 12 oz cooked chicken breast (from about 1 lb raw) 340 g
Olive oil 2 tbsp olive oil 27 g
Lemon juice, fresh 3 tbsp lemon juice (1 lemon) 46 g
Garlic, raw 3 cloves garlic, crushed 9.0 g
Oregano, dried 1 tsp dried oregano 1.0 g
Paprika ½ tsp paprika 1.2 g
Black pepper, ground ½ tsp black pepper 1.2 g
Rice, white, long-grain, cooked 3 cups cooked white rice, cooked without salt (about 1 cup dry) 474 g
Butter, unsalted 1 tbsp unsalted butter 14 g
Parsley, fresh 2 tbsp chopped fresh parsley 7.6 g
Green beans, boiled 2 cups green beans, fresh or frozen, boiled 252 g

Steps

  1. Mix the oil, lemon juice, garlic, oregano, paprika and pepper. Coat about 1 lb of raw chicken breast in it and leave for 15 minutes (or overnight in the fridge).
  2. Heat the oven to 425 °F (220 °C). Roast the chicken on a lined tray for 20–25 minutes, until the thickest part reaches 165 °F (74 °C) on a food thermometer.
  3. While it roasts, cook the rice without salt and stir in the butter and parsley. Boil or steam the green beans for 5–6 minutes and drain.
  4. Let the chicken rest for 5 minutes, slice, and serve 3 oz with ¾ cup rice and ½ cup green beans.

Why it works for kidneys

  • Buy chicken that is not "enhanced" or "injected with a solution": that liquid adds sodium and phosphate.
  • White rice has about a third of the potassium and phosphorus of brown rice.
  • Green beans are one of the lowest-potassium vegetables, about 92 mg per ½ cup.

Make it fit you

  • Before dialysis: serve 2 oz of chicken (about 18 g protein) and add ¼ cup rice if your team set a lower protein target.
  • On dialysis: 3–4 oz of chicken fits the higher protein target of 1.0–1.2 g per kg.
  • Freeze: freeze cooked, sliced chicken in portions for up to 3 months; it makes the chicken salad and soup recipes quicker.
