Lemon chicken salad sandwich with grapes¶
Deli chicken and turkey usually have added salt and phosphate. Leftover chicken you cooked yourself has about 64 mg sodium in 3 oz, against about 510 mg in 2 oz of sliced deli turkey. Lemon and dill do the work that salt would.
Serves 2 · 10 minutes, with leftover chicken · Lower potassium · Lower phosphorus · Dialysis-friendly · Make ahead
Carbohydrate per serving
37 g carbohydrate (about 2½ carb choices of 15 g). For about 55 g, add a small apple (about 21 g) or ½ cup of canned pineapple (about 20 g).
Per serving¶
| Energy | Carb | Protein | Potassium | Phosphorus | Sodium | Fluid | Fiber |
|---|---|---|---|---|---|---|---|
| 375 kcal | 37 g | 23.6 g | 396 mg | 207 mg | 426 mg | none | 2.7 g |
Checked by scripts/build_handbook.py: sodium at most 600 mg per serving; "lower potassium" means at most 600 mg and "lower phosphorus" at most 300 mg per serving. See how recipes are checked.
Ingredients that are not in the app's food list (herbs, spices and a few others) add about 8 mg potassium per serving; they are counted above.
Ingredients¶
| Ingredient | Amount | Grams |
|---|---|---|
| Chicken breast, roasted, skinless | 4 oz cooked chicken breast, diced (about 1 cup) | 113 g |
| Mayonnaise | 2 tbsp mayonnaise | 28 g |
| Lemon juice, fresh | 2 tsp lemon juice | 10 g |
| Celery, raw | ½ stalk celery, finely chopped | 20 g |
| Grapes, red or green, raw | ½ cup red or green grapes, halved | 76 g |
| Dill weed, dried | ½ tsp dried dill | 0.5 g |
| Black pepper, ground | ¼ tsp black pepper | 0.6 g |
| Bread, white | 4 slices white bread | 116 g |
| Lettuce, romaine | 1 cup shredded romaine, or 4 leaves | 47 g |
Steps¶
- Mix the mayonnaise, lemon juice, dill and pepper in a bowl.
- Stir in the chicken, celery and grapes.
- Spread on 2 slices of bread, top with lettuce and the other slices, and cut in half.
Why it works for kidneys¶
- Home-cooked chicken instead of deli meat saves several hundred milligrams of sodium and avoids phosphate additives.
- Grapes are a lower-potassium fruit at ½ cup (about 144 mg).
- Keep the filling cold and eat it within 3–4 days.
Make it fit you¶
- Before dialysis: use 3 oz chicken for 2 sandwiches if your protein target is lower; add a little more lettuce and cucumber.
- Wrap instead of bread: a large lettuce leaf cuts the carbohydrate to about 9 g per serving; count the change for insulin.
- Apple instead of grapes: ½ small apple, diced.
